Super Easy Crock Pot Mexican Chicken

It really doesn't get any easier then this to make a homemade delicious meal!

  • 2 cups salsa
  • 1 lbs chicken
  • 1 can black beans

Spray bottom of crock pot with non-stick spray or olive oil
Put 1/2 cup salsa on the bottom of the crock pot
Put in chicken breasts and cover with the rest of the salsa
Cook on low 4-6 hours or high 2-3 hours.

Pull apart chicken with 2 forks and serve.


We served on whole wheat wraps and added shredded cheese and sour cream. This recipe would be great on taco shells, in a tortilla bowl or even on a bun. You can add anything you like to also "spice" up this recipe. Think onions, peppers, jalapenos etc.

Another option is to omit the salsa and use BBQ sauce for Southern style pull apart chicken. Serve on some hearty rolls with a side salad... delicious!
